On the mountainside of the Rift Valley in Yirgacheffe, Ethiopia, farmers hand deliver their ripe cherries to the Kebel Aricha mill. Once sorted,
the beans are put on the drying beds
and turned for four to six weeks in an effort to minimise ferment.
The dried cherry is then taken to their mill in Addis Abba where they are hulled and bagged.
