The “Tatama National Natural Park” is a protected national park of Colombia that sits exactly in the heart of central coffee growing region in the estate of Risaralda, which is also known as “Coffee cultural landscape” declared by UNESCO in 2011. The people from this region have a culture entrepreneurship, courage, enthusiasm and a lot of kindness.

This coffee comes from the farms located in the western mountain range in Colombia.

The coffee cherries come from many small farms that are located in the top of the mountains above 1650 masl which are the lands with the best conditions to grow coffee. The high quality of this coffee cherries is obtained because the fruits are able to ripe more slowly in these climate conditions. We have developed a traditional specific
fermentation technique in order to promote the production of the metabolites which helps us to get fruit notes such as red fruits, dry fruits and spicy notes.

Eighty percent of the total drying process is sun-dry using greenhouses and 20 percent is done by using mechanical drying systems, in this case, we use pre – drying system, which allows us to maintain the control over the process in the final stage.

We have specialized staff who frequently visit the farms and processing facilities to verify the application of protocols of sorting, fermentation and drying. Each lot of dried cherry is analyzed and cupped at the coffee lab to determine the level of quality. The Natural Tatama has been developed throughout several years with huge effort, many hands working together, each one has given their particular touch to get the flavor and aroma desired.

TASTING: Plum and blackberry with a clean, nice long finish and good acidity.

NOTES: Tastes like licking twilight sparkle, my little pony, all plum and blackberry. Great for filter.
